We started the interview by asking, “What inspired you to start your business, and what vision drives it to this day?”

George shared, “From a very young age, I was drawn to the energy and emotion behind human interactions, especially in spaces where people gathered to celebrate, relax, or connect. Growing up around the hospitality industry, I realized that this business isn’t just about rooms and restaurants, it’s about creating environments that make people feel seen, valued, and cared for.

What inspired me to start was the idea that I could elevate standards, not just in service, but in how we define the guest experience altogether. I wanted to blend international flair with personalized touches, taking the essence of luxury and making it feel warm and accessible.

Today, the vision that drives me is to continue reshaping hospitality and entertainment by integrating culture, technology, and design in meaningful ways. It’s about creating spaces that are both aspirational and grounded, where every detail is intentional, and where people leave with more than they expected—emotionally and experientially.”

Embracing Digital Revolution

Technological advancements are significantly reshaping businesses. To learn how George Dfouni implements innovative practices, we inquired, “How do you use technology to drive innovation and efficiency in your company?”

Technology is no longer a luxury in our industry—it’s a lifeline. From a guest’s first digital interaction with our brand to the post-stay experience, every touchpoint is optimized using smart tools.

We’ve implemented AI-powered booking systems that provide real-time personalization. Our CRM platforms allow us to anticipate needs before guests even arrive. On the operations side, we’ve invested in property management systems that reduce friction, automate scheduling, and improve energy and resource efficiency.

But innovation goes beyond tools. We also use data analytics to track performance, analyze trends, and refine our offerings. Whether it’s dynamic pricing, optimizing marketing campaigns, or identifying guest behavior patterns, we let the data guide us—but always humanize the outcome. Technology allows us to do more with less, but it’s the strategy behind it that drives results,” explained George.

He mentioned, “A great brand starts with a great team. I’ve always believed that people should feel that their role is more than just a job—it’s a stepping stone toward something bigger.

We invest in our team through training programs that aren’t just technical but also leadership-driven. We bring in guest speakers, organize workshops, and encourage team members to attend international hospitality expos and conferences. We also use mentorship internally, pairing experienced leaders with younger talent, fostering an exchange of wisdom and fresh thinking.

But most importantly, we create an environment where feedback is welcomed, innovation is encouraged, and growth is expected. People feel comfortable challenging ideas and proposing better ways of doing things. In today’s fast-paced world, companies that don’t learn stagnate. Ours is built on the belief that the moment you stop learning is the moment you fall behind.”

We further asked, “What strategies help you stay competitive in a rapidly changing market?”

The hospitality industry is shaped by culture, economy, technology, and global politics. Staying competitive means staying curious and adaptive. One key strategy is to remain relentlessly customer-focused. We listen—through reviews, direct feedback, social media, and on-the-ground interactions. That allows us to adjust quickly and offer experiences that resonate with today’s guest, not yesterday’s.

Another strategy is diversification. We don’t put all our energy into one model. Whether it’s boutique hotels, nightlife, or hybrid concepts like co-working + co-living, we explore new formats that reflect shifting lifestyles. We also partner with trendsetters—designers, chefs, DJs, digital creators—who bring new energy and ideas into our spaces. And of course, we constantly refine our digital footprint, ensuring we remain visible, relevant, and engaging in the online space.

In short, staying competitive isn’t about reacting to change—it’s about predicting it and being ready to lead,” George added.

Transformative Projects at Independent Hospitality

Interested to learn more about the initiatives undertaken by Independent Hospitality, we asked him to highlight a project or initiative that made a significant impact on the company.

He explained, “One of the most transformational initiatives came in the wake of the pandemic, when we were forced to rethink how people travel, socialize, and work. We launched a rebranding project that did more than change a logo—it redefined who we were. We repositioned several of our properties to focus on flexibility: offering longer stays, digital-nomad packages, wellness-focused amenities, and experiential programming like art events and culinary pop-ups.

This shift not only attracted a new kind of guest but helped us retain and even expand our base during a time when many in the industry were downsizing. It reminded us that innovation doesn’t always come from invention—sometimes, it comes from reimagining what you already have.

That initiative became a blueprint for future growth, demonstrating how agility and vision can turn crisis into opportunity.”

In the dynamic hospitality industry, ensuring business agility is crucial. So, we asked, “How do you ensure your business remains agile and adaptable to industry changes?”

George mentioned, “Agility comes from mindset, structure, and culture. We build systems that are modular and scalable, allowing us to pivot operations quickly based on market conditions. From a leadership standpoint, we hold quarterly strategic reviews—not just to look backward, but to anticipate what’s ahead. We study local and global market trends, look at competitors, and explore emerging technologies and behaviors.

Culturally, we encourage experimentation. We don’t punish failure; we analyze it, learn from it, and move forward smarter. Whether it’s launching a new concept, piloting a service upgrade, or entering a new market, we do it with speed and clarity.

Adaptability isn’t a reaction—it’s a discipline. And we’ve made it a core part of how we operate.”

Plans we asked George Dfouni

To understand how George Dfouni plans to expand his company, we posed the question, “What are your short-term and long-term goals, and how do you plan to achieve them?”

George shared, “In the short term, we’re focused on expanding our digital footprint, enhancing our sustainability practices, and opening a select group of boutique and lifestyle properties in key urban centers and high-demand resort destinations.

A major part of our near-term strategy is entering the Extended Stay hotel market. We’ve seen a clear shift in traveler behavior—guests are staying longer, mixing business with leisure, and seeking spaces that feel more residential without sacrificing hotel-level service. Our Extended Stay concepts will offer elevated comfort, design-forward suites, and amenities tailored to modern professionals, digital nomads, and relocating families. This category not only meets an evolving demand but also provides operational stability and stronger occupancy rates year-round.”

He even mentioned, “In the long term, our vision is to build a global lifestyle hospitality brand that seamlessly integrates hospitality, entertainment, wellness, and community. This means developing properties that go beyond the traditional hotel model—spaces that host events, encourage collaboration, and become cultural hubs in their own right.

We plan to achieve this through strategic partnerships with developers, tech innovators, and creatives. We also prioritize thoughtful real estate acquisitions, and continued brand innovation for better networking, alongside focusing on flexible models like hybrid co-living, remote work accommodations, and experiential travel offerings.

The goal is not just growth—it’s intentional, sustainable, and adaptive expansion. We want to scale in a way that maintains our service excellence and brand integrity, while meeting the evolving expectations of a global audience.”

As an industry expert, we asked George Dfouni to share advice addressing aspiring entrepreneurs looking to make an impact.

First, know why you’re doing it. Purpose is your compass—it’ll guide you when challenges inevitably arise. Second, be ready to work harder than anyone else. Passion gets you started, but perseverance gets you through. There’s no substitute for discipline.

Third, surround yourself with people who are smarter than you. Listen more than you speak. Learn to delegate and build trust within your team. Fourth, don’t chase trends—create value. Trends come and go, but real value stands the test of time.

And lastly, never stop evolving. The world doesn’t wait. Stay curious, stay humble, and always be a student of your industry,” George added.
